Honey

How to recognise real honey - a quick guide for consumers

Why is the topic so important?

In recent years, the honey market in Europe has faced a serious problem - the presence of mixtures and products containing sugar syrups from third countries. It is becoming increasingly difficult for the end consumer to distinguish between quality natural honey and industrially processed alternatives.

Real honey is a product created entirely by bees. No colours, sugars or preservatives are added.

  1. Crystallization is the surest natural indication of a quality product.

One of the most common questions is, „Why is my honey candied?“

The crystallisation (saccharification) of honey is a completely natural physical process in which it passes from a liquid to a solid state, proving its natural origin.

The main reason is the high sugar content (over 70% glucose and fructose) with low water content (below 20%), which makes the honey an over-saturated solution. Glucose crystallizes more easily than fructose.
Important: crystallized honey is not spoiled. On the contrary, it is proof of its natural origin.

  2. Aroma and taste
Natural honey has a rich and complex aroma. It is never one-sided or overly sweet. The taste varies according to the region, the season and the vegetation.

With real honey you will feel:
-floral notes
-light acidity
-aftertaste

Industrial blends usually have a characteristic and strongly sweet taste.

  3. Origin matters
The surest way to be sure of quality is to buy directly from a beekeeper.

When you know the manufacturer:
-know where honey comes from
-have information about the area
-you have transparency about the production method

Small family apiaries usually rely on the high quality of their bee products.

  4. Home „tests“ - myths and reality
Tests such as:

- „If it sinks in water, it is real“
- „If it burns, it's quality“

These methods are not scientifically proven. The only sure way is laboratory analysis.

  Conclusion
Real honey is not just a sweetener. It is the result of a natural process, time and care. By choosing honey from a proven producer, you are choosing quality and support for sustainable beekeeping.
